Capsicum annuum (65 days)
Greek Pepperoncini peppers are a sweet, crunchy, very mild chile prized for pickling and fresh eating. Familiar from sandwich shops, pizzerias, and salad bars, these peppers bring bright flavor and satisfying texture without heat—making them a crowd-pleasing favorite.
Exceptionally productive, compact plants yield dozens of 4" long peppers per harvest. Fruits begin yellow-green and mature through orange to red, offering flexibility for harvesting at different stages. A classic ingredient in Greek salads with lettuce, feta, and olives, pepperoncinis also shine pickled, sliced onto sandwiches, or served alongside grilled dishes.

Growing Notes
Start seeds indoors about 8 weeks before transplanting. Sow ¼" deep in shallow flats. Pepper seeds germinate slowly in cool soil; maintain soil temperatures of 80–90°F for best results.
When first true leaves appear, transplant seedlings into 2" cells or 4" pots. Grow on at about 70°F during the day and 60°F at night. Transplant outdoors after danger of frost, once soil is warm and weather is settled.
Space plants 12–18" apart in rows 24–36" apart.
